
5-Minute Easy Recipe: Spicy Garlic Noodles with Eggs
This recipe is perfect for a quick and satisfying meal. It's packed with flavor, thanks to a simple sauce that coats every strand of noodle. The egg adds a nice richness and protein boost. This recipe serves 1, but you can easily double or triple the ingredients to serve more people.

- Cook the noodles: Bring a pot of water to a boil. Cook the instant noodles according to the package directions, but drain them 2-3 minutes earlier than the recommended time. This will ensure they don’t get soggy.
- Make the sauce: While the noodles are cooking, mix the soy sauce, oyster sauce, sesame oil, and chili flakes in a small bowl.
- Sauté the garlic and egg: Heat a pan or wok over medium-high heat. Add a tablespoon of oil to the pan. Sauté the minced garlic for about 30 seconds until fragrant. Then, crack the egg directly into the pan and scramble it with the garlic until cooked through.
- Combine ingredients: Add the cooked noodles and the prepared sauce to the pan with the egg and garlic. Toss everything together vigorously for about 1 minute, making sure the sauce coats the noodles evenly.
- Serve and garnish: Transfer the noodles to a bowl. Garnish with chopped green onions and a few extra chili flakes if desired.

Tips and Variations:
- For more protein: Add cooked chicken, shrimp, or tofu.
- For more vegetables: Add some cooked vegetables like bok choy, spinach, or bell peppers.
- For a richer flavor: Use a good quality soy sauce and oyster sauce.
- For a different kind of heat: Use a dollop of chili crisp instead of chili flakes.
- Adjust to your liking: The great thing about this recipe is that you can easily adjust the amount of garlic, chili, and sauces to suit your taste. Don’t be afraid to experiment!
I’m using chow fun flat rice noodles, but you can use any noodles of your choice.
You might have to add more seasoning if you’re more on the extra flavor side. This was made with Meekatang gravy topping in mind. ?
