Ingredients
For the Pork Marinade:
- 1 lb pork shoulder or loin thinly sliced
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 1 tsp sesame oil
- 1/2 tsp sugar
For the Stir-Fry Sauce:
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp Shaoxing wine or dry sherry
- 1 tsp sugar
- 1/2 tsp ground white pepper
- 1 tsp cornstarch
- 1/4 cup chicken or vegetable broth
For the Stir-Fry:
- 1 tbsp vegetable oil
- 2 cloves garlic minced
- 1- inch piece of ginger julienned
- 1 bunch about 1 cup fresh chives, cut into 2-inch segments
- Cooked rice for serving
Instructions
Marinate the Pork:
- In a medium bowl, combine the thinly sliced pork with all the marinade ingredients (soy sauce, cornstarch, sesame oil, and sugar).
- Mix well with your hands until the pork is evenly coated. Set aside to marinate for at least 10 minutes while you prepare the other ingredients.
- Prepare the Sauce:
- In a separate small bowl, whisk together all the stir-fry sauce ingredients (soy sauce, oyster sauce, Shaoxing wine, sugar, white pepper, cornstarch, and broth) until the cornstarch is completely dissolved. Set aside.
Stir-Fry:
- Heat the vegetable oil in a wok or large skillet over high heat until it just begins to smoke.
- Add the marinated pork and stir-fry quickly for 2-3 minutes, until the pork is mostly cooked through and lightly browned on the edges.
- Push the pork to one side of the wok. Add the minced garlic and julienned ginger to the open space and stir-fry for about 30 seconds until fragrant.
