Pork and Chive Stir-Fry

Saucy Pork and Chive Stir-Fry with Ginger and Garlic

Ingredients
  

For the Pork Marinade:
  • 1 lb pork shoulder or loin thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1 tsp sesame oil
  • 1/2 tsp sugar
For the Stir-Fry Sauce:
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Shaoxing wine or dry sherry
  • 1 tsp sugar
  • 1/2 tsp ground white pepper
  • 1 tsp cornstarch
  • 1/4 cup chicken or vegetable broth
For the Stir-Fry:
  • 1 tbsp vegetable oil
  • 2 cloves garlic minced
  • 1- inch piece of ginger julienned
  • 1 bunch about 1 cup fresh chives, cut into 2-inch segments
  • Cooked rice for serving

Method
 

Marinate the Pork:
  1. In a medium bowl, combine the thinly sliced pork with all the marinade ingredients (soy sauce, cornstarch, sesame oil, and sugar).
  2. Mix well with your hands until the pork is evenly coated. Set aside to marinate for at least 10 minutes while you prepare the other ingredients.
  3. Prepare the Sauce:
  4. In a separate small bowl, whisk together all the stir-fry sauce ingredients (soy sauce, oyster sauce, Shaoxing wine, sugar, white pepper, cornstarch, and broth) until the cornstarch is completely dissolved. Set aside.
Stir-Fry:
  1. Heat the vegetable oil in a wok or large skillet over high heat until it just begins to smoke.
  2. Add the marinated pork and stir-fry quickly for 2-3 minutes, until the pork is mostly cooked through and lightly browned on the edges.
  3. Push the pork to one side of the wok. Add the minced garlic and julienned ginger to the open space and stir-fry for about 30 seconds until fragrant.
  4. Add the chive segments to the wok and toss with the pork, ginger, and garlic for about 1 minute. The chives should be bright green and slightly tender.
Finish the Dish:
  1. Give the prepared stir-fry sauce a quick whisk to ensure the cornstarch hasn't settled.
  2. Pour the sauce over the pork and vegetables.
  3. Stir and toss everything quickly until the sauce thickens and coats all the ingredients, about 30 seconds to 1 minute.
  4. Remove from heat immediately to prevent overcooking the pork and chives.
Serve:
  1. Serve the saucy pork and chive stir-fry hot, directly over a bowl of steamed rice. Enjoy!
