Ingredients

  • 2 pound of pork ribs cut into individual pieces
  • 1/2 teaspoon sugar
  • 1/2 tablespoon chicken bouillon
  • 1 tablespoon fish sauce
  • 1 teaspoon garlic powder
  • 1/4 cup cornstarch
  • 1 teaspoon ground white pepper
  • Cooking oil for frying
  • fresh jalapeño chopped
  • fresh bell pepper chopped
  • 1/2 bulb of garlic minced

Method

  1. In a large mixing bowl, combine the ribs, sugar, chicken bouillon, fish sauce, and garlic powder. Mix well and let it marinate for 15 minutes.
  2. Add the cornstarch and give it a good toss.
  3. Heat the cooking oil in a deep frying pan or wok to around 350-375°F (175-190°C).
  4. Carefully place the ribs into the hot oil. Fry them in batches, making sure not to overcrowd the pan. Fry for about 8 minutes or until they are golden brown and crispy.
  5. Use a slotted spoon to remove the fried ribs and place them on a plate lined with paper towels to drain excess oil.
  6. In another pan, heat up a tablespoon of the fried oil and add in the minced garlic.
  7. Add in the fried ribs and give it a good toss. Sprinkle some ground white pepper and stir in the chopped peppers.
  8. Serve the salt and pepper fried ribs hot, garnished with some additional salt and black pepper if desired.
  9. These ribs are crispy on the outside and flavorful. Enjoy your salt and pepper fried ribs!
