Tanghulu (Chinese Candied Fruit Skewers)

Ingredients
  

  • 2 cups 400 g granulated sugar
  • 1 cup 240 ml water
  • 1 tablespoon corn syrup optional, for smoother coating
  • 4 cups fresh fruit strawberries, grapes, cherry tomatoes, blueberries, or mixed
  • 8 –10 bamboo skewers

Method
 

Prep the Fruit
  1. Wash and thoroughly dry fruit. (Important: any water will ruin the sugar coating).
  2. Skewer 3–5 pieces of fruit on each stick.
Cook the Syrup
  1. Add sugar + water + corn syrup to a saucepan.
  2. Heat on medium-high until mixture reaches 150°C / 300°F (hard crack stage).
  3. Do not stir—just swirl pan occasionally.
Coat the Skewers
  1. Dip each skewer into the hot syrup, rotate quickly to coat.
  2. Let extra syrup drip off.
  3. Place skewers on parchment paper or an oiled tray to harden.
Cool & Enjoy
  1. Within a minute, the sugar will harden into a glossy, glassy shell.
  2. Serve immediately for the best crunch.
